A few weeks ago I was wandering through the store and glimpsed a box of fruit roll-ups.  I remember as a kid I loved popping open my lunch box and seeing one of those elusive treats.  Chewy, sweet, fruity, delicious.  It was the perfect end to a packed lunch.  Fast forward 20 some odd years later and I still enjoy them from time to time.  Except, now I like to be able to pronounce what’s in my food for the most part.  The best part about these babies?  They are ridiculously easy!

Delicious and easy these homemade raspberry fruit roll-ups will take you back to your childhood!  With only 3 ingredients you won't mind popping these fruit roll-ups in your kids' lunches!

I had some frozen raspberries leftover from my raspberry lemonade and couldn’t decide what to do with them until I saw those yummy fruit roll-ups in the store.  I’ve seen a recipe for fruit leather in passing on Pinterest before but always assumed it was too complicated.  How very wrong I was.  This recipe has only three ingredients and while it takes awhile from start to finish it doesn’t have much hands on time, which is nice.  If you enjoy the tartness of raspberries you could possibly leave out the sugar in the recipe all together or cut it back to taste.

I strained  the seeds out of my raspberry puree because I can’t stand the way they feel when I bite into them.  But if you’re a seed fan go ahead and leave them in!  It is now my mission to make these fruit roll ups with all my favorite fruits from blueberries to apples to maybe even pineapple!  I don’t know!  The opportunities are endless!

If you don’t have a silicone baking mat I highly suggest you get one because it will make this recipe about 1,453,954 times easier and easier is a little something we all need in our lives.  If you’re not willing to invest in one quite yet {although you should ’cause those things are the BOMB!} then you can use parchment paper instead and get relatively the same effect.

Raspberry Fruit Leather

Ingredients
  1. 1 12oz bag of frozen raspberries, thawed
  2. 1/2 cup sugar
  3. Juice of 1/2 a lemon
Instructions
  1. Preheat oven to 200 degrees and add thawed raspberries, sugar, and lemon juice to a food processor. Process until smooth.
  2. If you want to remove the seeds pass mixture through a fine mesh strainer until all the juice is removed.
  3. Pour onto a silicone baking mat or parchment paper lined baking sheet and using an offset spatula spread in an even layer.*
  4. Bake at 200 degrees for 2 hours, turning after an hour.
Notes
  1. *An even layer is crucial to this cooking properly. If it's too thin in some spots it will burn while the rest is still sticky to the touch.
