I can’t figure out why but the deeper we get into graduation season the more I miss home.  This is weird because absolutely no one in my family is graduating this year.  Strange, yeah?  I mean, there was a period of time where we had some kind of college or high school graduation for a good three or four years but this year we’ve got nothing.  Next year my brother will be graduating from high school but nada in 2015.  So then why am I kind of obsessed with graduation parties and fare??  Your guess is as good as mine but luckily I can make plenty of excuses for party food 😉

I’m not sure I’d call these mints “party food” per se but they are great to serve at a party in a little bowl as a refreshing….uh, snack?  I certainly used to think these things were snacks when I was a kid and would eat them by the handful whenever my mom would bring them home from the store.  My grandpa still keeps a little dish of them on his side table in his living room, too.  

They’re so easy and great to pull together if you actually are having a graduation party this year {and not just wishing you were}.  Plus they look super fancy.  So you can impress the pants off your guests.  And if you’re thinking ahead to holiday gift giving like I always am then these also make awesome gifts for neighbors, teachers, book club friends, you name it.

There are a couple different ways for you to let these set up, but my favorite is the freezer option.  Especially if you live in an exceptionally humid environment.  We don’t have AC and it was so humid that even though they sat out for 24 hours to set up they were still very soft in the middle.  So I suggest pipping these onto some wax paper, letting them set up on the outside for a few hours, then carefully moving them into a container to stick in the fridge or freezer to harden completely.

Yields 3
Old fashioned cream cheese mints are perfect for your next graduation party or as a great holiday gift!

Ingredients
  1. 4 oz cream cheese
  2. 2 cups powdered sugar
  3. 1 tsp peppermint extract
Instructions
  1. In a stand mixer whisk cream cheese until smooth. Add powdered sugar by the 1/2 cup and blend until smooth.
  2. Add peppermint extract and blend on low speed for 1 minute.
  3. Using a pipping bag and star tip, pipe mixture onto a silicone baking mat or wax paper and allow to set for at least 3 hours.
  4. Transfer to a storage container and let finish setting up in the fridge or freezer until completely hard.
