I’m generally a pretty plain Jane when it comes to pizza.  Extra cheese.  Pepperoni.  The end.  But occasionally I like to mix it up.  You know with mini pizzas.  Or if I want to get really crazy I’ll make a ham and cheese calzone.  I’m a rebel.  What can I say.  But the older I get the more my taste evolves.  That’s not to say that pepperoni pizza with extra cheese isn’t still my pizza go to on a hectic night but I’m starting to see the pizza light.  And those ham and pineapple pizza eaters make just a little bit more sense to me these days.

A few weeks ago I found some locally raised bacon in my roommate’s freezer.  And when she offered me a pound to use just for lil ol’ me I immediately said yes.  There might have been some delighted squeals, too.  I can’t recall.  But I went a little bacon crazy.  I created not one but two bacon recipes for Jill this month and then one for myself.  I won my roommates’ heart when I made the juiciest baconest burgers you’ve ever seen.

And when I was poking around Pinterest for more bacon recipes {you can’t even imagine my joy at how many recipes pop up when you search :bacon.  It’s magical.}  I saw bacon chicken ranch pasta over and over again.  But pasta didn’t make me think pasta.  It made me think pizza.  So the rebel that I am made pizza instead!  And the result was this delicious cheesy bacony chicken ranch goodness.  And it was seriously so good.

I used my favorite pizza crust recipe that offers what I most crave in a pizza.  A crispy crunchy crust.  You can make just one pizza instead of two from this recipe for a thicker chewier crust but if you’re a thin crust die hard then the original recipe is your jam.  There’s no pizza sauce in this recipe which is something my mom would like because she’s not a fan of red tomato sauces.  Use some leftover rotisserie chicken to streamline another part of the process and not have to bake your own.

Drizzle that hot, fresh-out-of-the-oven pizza with more ranch dressing and for heaven sake’s don’t skimp on the bacon!

Bacon Chicken Ranch Pizza
Serves 4

For the crust
  1. 2 cups warm water
  2. 1 Tbs yeast
  3. 1/2 Tbs salt
  4. 5 cups flour, divided
  5. 4 Tbs olive oil (2 for each pizza)
For the toppings
  1. 1 large chicken breast
  2. 1/2 tsp garlic powder
  3. Pinch of salt
  4. 4 strips bacon, cooked crisp
  5. 1/2 cup ranch dressing, plus more for drizzling on top
  6. 8 oz mozzarella cheese, shredded and divided
For the dough
  1. Mix warm water and yeast and let sit for five minutes until yeast proofs.
  2. Add 2 1/2 cups flour to proofed yeast and stir until combined.
  3. Mix together salt and remaining flour then in the bowl of a stand mixer fixed with a dough hook combine yeast/flour mixture with remaining flour/salt mixture adding in 1/2 cup increments.
  4. Mix on low speed until dough forms a ball.
  5. Place in a well oiled bowl, cover with olive oil, and allow dough to rise for 30 minutes to an hour or until dough has doubled in size.
  6. While dough is rising, sprinkle chicken with garlic powder and salt and bake at 350 degrees for 15 to 20 minutes or until juices run clear. Shred with two forks and set aside.*
  7. Once risen, separate dough into two equal parts and refrigerate 2nd half for up to one week if desired.**
  8. Stretch into your pizza shape and top with 1/2 cup ranch dressing, 4 oz shredded cheese, half of the shredded chicken, and 2 slices crumbled bacon.
  9. Create a second layer of cheese, chicken, and bacon and bake at 400 degrees for 15 to 20 minutes or until crust is baked through and crispy on the edges.
  10. Drizzle warm pizza with more ranch dressing and enjoy!
  1. *Skip this step if using a rotisserie chicken.
  2. **The dough recipe makes TWO crusts but the toppings ingredients listed are for just one pizza.
