Easy Homemade Chicken Nugget Recipe - Enchanted Homeschooling Mom

Are your children fans of chicken nuggets?  I know that mine just love chicken nuggets.  Sometimes when we are having our E.H.M. Breaded Chicken Tenders I modify a few pieces with this recipe. My children, and my husband and I too, love chicken this way because we all love chicken nuggets.  In my opinion, this recipe is a healthier, more economical way to have chicken nuggets.  It is especially nice and easy on the budget to because it uses the same ingredients as my breaded chicken tender recipes, so we do not have to purchase exotic ingredients to make this dish. 

So, to make your own E.H.M. Easy Homemade Chicken Nuggets you will need the following ingredients:

  • 1-2 pounds Boneless, skinless chicken (thawed)
  • Bread Crumbs
  • Grated Parmesan Cheese
  • Italian Seasoning
  • 1 egg (optional) 

And the following kitchen tools:

  • Cookie sheet/baking tray
  • Aluminum Foil
  • Non-stick spray
  • Quart or Gallon sized Ziploc style bag
  • A cutting board 

Here is an example of the ingredients I use:

As you can see, the chicken I use is the individually wrapped boneless chicken breasts from Costco.  I find that these boneless chicken breasts are not only tasty, but also are a great size because they are frozen, thaw easily, and are all generally the same size.  Then I use regular bread crumbs.  You can use Italian bread crumbs, but since I am using Italian Seasoning I can get away with using traditional plain bread crumbs. 

Ok, the first step is to thaw the chicken breasts.  Once thawed, set your oven to a temperature of 400.  Line the cookie sheet or baking tray with aluminum foil.  Spray the non-stick spray onto the tin foil.  Set the cookie sheet/baking tray aside. 

Next, in the Ziploc bag, blend 1 cup of bread crumbs with a table spoon (or so) of Italian seasoning, and ¼ cup to ½ cup of grated parmesan cheese.  I mix mine up with a fork first to break up any parmesan cheese chunks.  Then, I shake up the mixture to make sure it is evenly mixed up.

Once the bread crumb mixture is complete, cut the thawed, raw, boneless, skinless chicken breasts into small, bite sized pieces. At this point, if your chicken is still wet you can proceed, otherwise: crack an egg into a bowl and use a fork to mix it up.  Dip your raw chicken into the egg to coat it.  You could also use mile or heavy cream, no matter what you use though, you are looking to have wet chicken for the bread crumb mixture to adhere to.  Then, drop a few pieces at a time of coated, raw chicken into the bag and shake it all up so that all sides of the chicken is completely covered in the mixture.  Remove the chicken pieces from the bag and align them on the cookie sheet.  Once all of the chicken is coated and your oven ‘dings’ that it is ready, slide the tray of nuggets into the oven.  Cook at 400 for 20 minutes.  You should adjust the cooking time for your oven, but either way, make sure the chicken is thoroughly cooked.  Here is a simple picture of what it could look like completely cooked and ready to plate.

Typically, we have white rice and fresh steamed vegetable when we eat this recipe in our home, but you can use any side dishes or veggies, or combinations that makes your meal delicious to your family.

    We eat gluten free, but this would be easy to adapt with gf bread crumbs. I'll have to try it!
